Tomato Chutney


I don’t know when and from where I got this recipe. I know that I like it a lot. The chutney is sweet yet it doesn’t compromise on the tartness of the tomatoes. Its almost jam like consistency enhances the perfect balance of flavours. 
Enjoy this with parathas, steamed rice, nachos, anything that you like. 
It’s quick and easy to make and it can be stored in a refrigerator for up to 3 months. 

Ingredients: 

Ripe tomatoes- 500 gm
Sugar - 1 cup
Cinnamon- 1” stick
Cloves - 4-5
Vinegar - 3 tbsp
Ginger paste - 1 tbsp
Garlic Paste - 1 tbsp
Red Chilli Powder - 2 tsp
Raisins (optional) - 10-12

Method: 

  1. Wash, blanch and peel the tomatoes. Chop them up roughly.
  2. Put the chopped tomatoes is a pan. 
  3. Add all the rest of the ingredients and cook without the lid on. 
  4. Cook till the chutney thickens. 
  5. Turn off the flame and let it cool.
  6. Transfer in a dry bottle. Let it mature for 2 days before consuming. 
  7. Keep it refrigerated. It can be stored for up to 3 months.
