Nan Khatai
Nan Khatai is our very own Indian biscuit. Its most commonly available and is found at almost all the tea shops. The basic ingredients, maida, besan and sooji are readily found in every Indian kitchen. I find these really quick and easy to make. This recipe will make around 20 biscuits.

Ingredients:
Maida - 1.5 cups
Besan - 1/2 cup
Sooji - 1/2 cup
Powdered Sugar - 1 cup
Cardamom powder - 1 tsp
Ghee - 1 cup
Baking powder - 1 tsp
Cardamom seeds for garnish

Method:

1. Preheat the oven to 180 degrees.
2. Put ghee and sugar in a bowl. Using an electric beater mix them together till it’s well mixed, light and frothy. It should take around 3-4 minutes.
3. Sift the maida, besan and baking powder.
4. Add the sifted dry ingredients in the ghee and sugar mixture.
5. Add cardamom powder and sooji.
6. Mix well and knead till it comes together.
7. Make small balls of the dough and flatten them slightly.
8. Put cardamom seeds on top and press slightly.
9. Place them on a greased baking tray and bake for 15-20 minutes at 180 degrees.
