Pumpkin and Walnut Ring Cake


I love cooking pumpkin or kaddu ki sabzi. But pumpkin is widely used in baking as well. Pumpkin along with some spices gives great taste and softness to a cake. 
This is a simple cake inspired from a recipe by RoseLevyBeranbaum. She uses cake flour which I have replaced with flour and corn flour. Also, I have reduced the amount of oil used.
This cake comes out extremely soft and moist. It's a must try.

Ingredients:


Flour - 1 cup

Corn flour - 1/4 cup
Baking Soda - 1 tsp
Cinnamon powder - 1tsp
Clove powder - 1/4 tsp
Nutmeg powder - 1/4 tsp
Salt - 1/4 tsp
Chopped and toasted Walnuts - 1/2 cup
Eggs - 2
Granulated Sugar - 3/4 cup
Oil - 80 ml
Fresh Pumpkin puree - 1 cup

Method:


1. Pre-heat the oven to 180 degrees.

2. Grease a bundt pan with oil and dust it with flour.
3. Sift the flour and cake flour. Add the spices, salt and baking soda to the flour mix.
4. Add the walnuts to the flour and coat them well with flour.
5. In a bowl beat the eggs, sugar and oil for 2-3 mins.
6. Add the pumpkin puree and mix well.
7. Gradually add the flour, mixing well after each addition.
8. Pour the batter in the prepared tin and bake for 30-35 mins.
9. Cool and unmold.
