Fruity Fluff

Summers!! All that one needs these days is some thing cold and chilled to eat and drink. I personally do not like to stand in the kitchen for really long in this heat. Well, preparing a meal does take time then why not save some time and go for an easy and quick pudding?
Fruity Fluff is a quick recipe and if chilled nicely, it’s a perfect summer pudding. Very few ingredients are required. In the recipe that I am sharing, I’ve used fresh fruits which can be substituted with canned mix fruits. If using canned then the fruits must be squeezed off the syrup and then chopped.

Ingredients:

Strawberry Jelly - 1 pkt
Fresh Cream- 200 ml
Powdered Sugar - 2 tbsp
Vanilla Essence - 1 tsp
Fresh/canned Fruits (chopped) - 1.5 cups

Method:
1. Prepare the jelly following the directions given on the packet.
2. Let it set in the fridge for 2-3 hours.
3. Once the jelly is set, in a clean bowl, pour the cream, sugar and essence. Using an electric beater whisk it till the cream reaches soft peak stage.
4. Transfer the jelly in a big bowl. Whisk it till it bricks down to small pieces.
5. Add the cream and the fruits to the jelly and mix with a spatula.
6. Pour in the desired container. Chill for 4-5 hours and serve.
