Strawberry Compote



Season of the 'Queen of fruits' is here! Strawberries are considered to be a power food. They have many health benefits and are so tasty and tempting that they rarely make it to the refrigerator in my house. For those who don't know, strawberries help in fat reduction and have a high fiber content. I don't think there's a better reason than this to eat these yummylicious berries.
Who doesn't love good food but sometimes in a dish what steals the show is not the main dish but the sides that are served along with it. Strawberry Compote is one such thing. Extremely easy to make and the best thing is that it's a 3 ingredient dish. Add a dollop of it to your ice cream, use it as a cake filling, drizzle it on top of a cake, have it with scones, spread it on your toast or just eat it like that. It's bright red colour adds that extra brightness to whatever you serve it with.  

In this recipe I've used 1 cup of sugar but it totally depends on how sweet the berries are and also how sweet you want your compote to be. 
This can be stored for up to 2 weeks in refrigerator.

Ingredients:

Fresh strawberry - 200 gm
Sugar - 1 cup (also depends on the sweetness of the strawberries)
Lemon juice - 8-9 drops

Method:

1. Wash n clean the strawberries and remove the leaves.
2. Cut them in halves and put in a pan over the flame.
3. Add in all of the sugar and lemon juice.
4. Let it cook on medium heat until the strawberries soften and the sugar cooks. At this point, taste to check if more sugar is needed.
5. Cook till it comes to a thick paste like consistency.
6. Let it cool.
7. Remove from the pan and store in a mason jar or any container of your choice.
8. The compote can be stored in the refrigerator for up to 2 weeks.
