Baked Cheesecake


I am mad about cheesecakes. I love the baked cheesecakes at Starbucks. I can finish two slices at one time and if I am skipping a meal then three😃. Unfortunately at present I am at a place which is around 1300 kms from the nearest Starbucks.😏 Can’t go there so might as well make one. 

Cream Cheese, which is the main ingredient in cheesecakes, is not readily available in India. So it’s best to make it at home. The recipe of Homemade Cream Cheese has already been uploaded on the blog. 

Baked cheesecakes often crack because of over mixing the batter. So avoid doing that to get the perfect top. 

Ingredients:

For crust
Digestive Biscuits- 150 gm
Butter- 50 gm melted
For Filling 
Cream Cheese - 400 gm (room temp)
Powdered Sugar - 175 gm
Lemon juice - 1 tbsp
Eggs - 3
Cream - 1/2 cup
Vanilla Essence - 1 tsp
Salt - a pinch

Method:

1. Grease the base and sides of a loose bottom 9 inch cake tin with butter.
2. Crush the biscuits in a food processor. Add the melted butter and mix well.
3. Press the crushed biscuits at the bottom of the lined baking tin. Spread it evenly on the base. Bake for 10 mins at 170 degrees. Set aside to cool. 
4. In a bowl beat the cream cheese till fluffy. 
5. Add the sugar, lemon juice, cream, vanilla and salt and mix well.
6. Add the eggs one at a time, mixing well after each addition. 
7. Pour the filling on the cooled crust and bake at 170 degrees for 40 mins or till the sides start turning light brown. 
8. It’s ok if the sides are brown and the filling is still not set. It will keep cooking even after taking the cake out of the oven.
