Simple Appe Recipe


I always have dosa batter ready at home because my daughter loves dosas in her lunch box. I use 1:2 ratio for urad dal and rice. Wash it nicely and soak it with some fenugreek seeds for 3-4 hours. Run it in the mixer afterwards and let it ferment overnight. Before preparing dosas add some salt in the batter. 

I recently purchased an appe pan and realized that it’s one of the best buys for a house with small kids. Kids love bite sized snacks and this gives just that. Appe pan are easily available in the market and even online. Mine is a non stick one so it’s easy to flip the appes even without using any oil. 

If you don’t wish to make the tempering then the onions and carrots can directly be added to the batter. I like to temper the batter for added flavour of the mustard seeds and the goodness of curry leaves. 
In the recipe below green chillies can also be added. 

Ingredients:
Dosa batter - 3 cups (should give around 25-30 appe)
Carrot - 1 grated
For tempering:
Oil - 1 tbsp
Mustard seeds - 2 tsp
Curry leaves - 10-12 
Onion - 1 chopped finely

Method:
1. To make the tempering, heat oil and add mustard seeds. When they start to pop add curry leaves and onions. Let the onions cook. Then turn off the flame.
2. Transfer the tempering in the batter. 
3. Add grated carrot and mix everything well.
4. Heat the appe pan. Add the batter in the mounds till it’s half full. Let it cook for 2-3 mins then flip them over. Cook for another 2 mins. 
5. Serve hot with chutney.
