Paneer Badaami

Last week was my mother's birthday. We planned to go out for dinner but since she wasn't feeling too well we decided against it. So I decided to make this recipe which is from her own recipe diary. She liked it a lot and when I told her that this was from her diary, she was surprised. She had no clue about it. We go to so many places, meet new people, gather recipes through our friends, books, TV but they just remain in the recipe book. This was the first recipe that I had copied from my mom's book and it took me 8 long years to make it. Its extremely easy and doesn't take much time to cook and turns out super delicious. 5 Minutes Microwave Chocolate Cake

These days I am living without an OTG. It’s tough! Because it means no baking. And when the kids want a cake.. they want it now!!! I am not a fan of microwave cakes but since I only have a basic microwave right now I decided to give microwave cake a try. This is a simple chocolate cake that cooks in just 5 minutes in the microwave. I used a small rectangular glass dish for baking. Silicon moulds can be used as well. Ingredients: Flour - 3/4 cups Oil - 1/2 cup Granulated Sugar - 3/4 cups Cocoa Powder - 2 tbsp Eggs - 3 Instant Coffee Powder - 1/2 tsp Baking Powder - 1 tsp Method: 1. Beat the eggs, sugar and oil together. 2. Sieve the dry Ingredients together. 3. Add the dry ingredients in the wet ingredients. Mix well. 4. Pour the batter in a greased glass dish that is appropriate for microwaves. 5. Microwave on high power for 5 mins. 6. Cool and cut in slices.

Pumpkin and Walnut Ring Cake

I love cooking pumpkin or kaddu ki sabzi. But pumpkin is widely used in baking as well. Pumpkin along with some spices gives great taste and softness to a cake. This is a simple cake inspired from a recipe by RoseLevyBeranbaum . She uses cake flour which I have replaced with flour and corn flour. Also, I have reduced the amount of oil used. This cake comes out extremely soft and moist. It's a must try. Ingredients: Flour - 1 cup Corn flour - 1/4 cup Baking Soda - 1 tsp Cinnamon powder - 1tsp Clove powder - 1/4 tsp Nutmeg powder - 1/4 tsp Salt - 1/4 tsp Chopped and toasted Walnuts - 1/2 cup Eggs - 2 Granulated Sugar - 3/4 cup Oil - 80 ml Fresh Pumpkin puree - 1 cup Method: 1. Pre-heat the oven to 180 degrees. 2. Grease a bundt pan with oil and dust it with flour. 3. Sift the flour and cake flour. Add the spices, salt and baking soda to the flour mix. 4.
