Whole Wheat and Beetroot Cake (Eggless)


Beetroot is something I try to use as much as I can in my cooking. Its full of Iron and folic acid. This recipe gives the beetroots a glamorous makeover. This whole-wheat beetroot cake is just perfect for kids. Add a couple of slices to your little one's lunch box and remain tension free. Not only will it fill their tummy, they will also unknowingly eat beetroots which otherwise is not liked by kids. For them it will be a dense, dark and delicious chocolate cake!

Ingredients:


Condensed Milk - 150 gm

Butter - 100 gm
Castor Sugar - 15 gm
Milk - 30 ml
Dark Chocolate - 150 gm
Whole Wheat Flour (Aata) - 125 gm
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
Beetroots - 2 small (boiled and pureed)

Method:


1. Preheat oven to 180 degrees.

2. Melt the dark chocolate in the microwave and set aside to cool.
3. Using a hand mixer, mix the butter and sugar together till light and fluffy.
4. Mix in the milk and condensed milk.
5. Add the cooled melted dark chocolate and mix well.
6. Add in the beetroot puree and mix till well combined.
7. Sift the wheat flour, baking powder and baking soda and add to the beetroot mixture. Fold it in till well combined.
8. Pour the batter in a greased 6" cake tin and bake for 25 mins.
