EGGLESS VANILLA CUPCAKES


Here are the most yummilicious cupcakes ever! One can make as many flavored cupcakes but nothing comes close to the basic vanilla cupcakes. 
As for me, I don't make these for anybody else but me. I love these cupcakes! These are extremely easy to make and the result of all the work that goes into making them is that you get the softest cupcakes ever.
I have frosted the cupcakes with basic vanilla buttercream frosting
Few things to always remember while making cupcakes:
- The oven should be pre-heated for at least 15 mins.
- Sift the dry ingredients twice from a height of 5-6 inches. This will ensure proper aeration and will result in light and soft cupcakes.
- Do not over fill the batter in the cupcake liners. They should be two-thirds full.

Ingredients:


All Purpose Flour - 1 cup 

Cornflour - 5 tbsp
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
Salt - a pinch
Thick curd - 1 cup
Granulated Sugar - 3/4 cup
Oil - 1/2 cup
Vanilla Essence - 1 tsp

Method:


1. Pre heat the oven to 180 degrees and line the cupcake tin with cupcake cases.

2. Sift the flour, cornflour, baking powder, baking soda and salt. Keep aside.
3. In a bowl mix curd and sugar using a hand mixer till the sugar is mixed in well.
4. Add in the oil and vanilla essence and mix well.
5. Gradually fold in the dry ingredients till it is combined well. Do not over mix the batter.
6. Spoon the batter in the prepared cupcake cases till they are two-thirds full.
7. Place in the oven and bake for 15-18 mins at 180 degrees.
8. Once they are done, remove from the oven and let them cool completely before frosting them.
