Lauki ki Kheer


The festival of Navratri is on and a lot of us are fasting. Some people keep a fast for all 9 days. So, while we relish our kuttu ki poories and aalu ka jhol let's not leave the sweets out. And why buy the sweets from the market when you can cook up something at home and that too real quick. 
Lauki or Doodhi is a vegetable that can be consumed if you at fasting and it cooks very quickly. In my recipe for the kheer I've used condensed milk. It thickens the kheer faster. However sugar can be used as a substitute. 

Ingredients:

Lauki / bottle gourd - 1 medium sized
Ghee - 1 tbsp
Milk - 1 ltr
Condensed milk - 150 gm 
Green Cardamom - 6-7
Cinnamon - 1/2" stick
Raisins - 9-10

Method: 
1. Peel, remove the seeds and grate the lauki.
2. In a heavy bottomed pan boil some water and add the grated lauki. Cook for 2 minutes.
3. Drain the water on a wash cloth and squeeze out excess water from the boiled lauki. 
4. In the same pan heat ghee and add cinnamon n green cardamom. 
5. Now put the lauki in the pan and stir it for 30-40 secs.
6. Add milk and let it come to a boil.
7. Pour in the condensed milk and keep stirring till the kheer thickens to your liking. 
8. Now add raisins and turn off the flame. 
9. Serve hot or cold.
